<section  class='av_textblock_section av-k2adath9-1b88cc642b4119922b2bcacb79ad1a21'  itemscope="itemscope" itemtype="https://schema.org/BlogPosting" itemprop="blogPost" ><div class='avia_textblock'  itemprop="text" ><p><strong><em>Džungla gastro bar je edinstven lokal na obali, natančneje v Kopru, ki s svojo kreativno in progresivno ponudbo hrane in pijače resnično predstavlja prostor, kjer se lahko kot gostje izgubimo v fantastični celostni izkušnji in se spet najdemo. Jaš, Aljoša in Marko, trije lastniki, ki s svojo mlado energijo dnevno polnijo lokal, pa so s svojo ekipo prava džungelska duša prostora. Ker sem bil direktno vpleten v proces priprave in razvoja ponudbe koktejlov za njih, bom tokrat namenil nekaj besed tej zanimivi tematiki. </em><em> </em></strong></p>
<p>Skupaj z Jašem smo začeli snovati koncept ponudbe koktejlov, dosti preden je Džungla pravzaprav obstajala. Imeli so izbran prostor, vedeli so, v katero smer bodo šli s hrano, prav tako pa smo izbrali tematiko za koktejle, ki smo jih podpisali pod delovni naslov: #istriantiki – neke vrste skovanka med tiki koktejli in istrsko obarvanimi okusi. Tiki v svetu koktejlov povezujemo s kompleksnimi svežimi in po navadi tropskimi koktejli, ki so se pojavili v ZDA v prejšnjem stoletju zaradi vpliva polinezijskih in drugih tihomorskih kultur. Ta tako imenovani tiki je veliko več kot samo stil koktejlov, je svojevrstno gibanje, ki zajema okraševanje lokalov, posebne tiki kozarce in celo oblačila. Tiki pa je kot kategorija pijač po eni strani izjemno kompleksna, kar se tiče števila sestavin, po drugi strani pa popolnoma sproščeno domišljijska v aspektu kreiranja teh mešanih pijač. V ospredje smo pri projektu Džungle postavili okuse Istre in jih popeljali v nekoliko bolj tiki smer. Nikakor ne bi mogli šteti vseh koktejlov na meniju med tikije kot take, saj so nekateri izpeljanke klasik, vendar pa jih vse povezuje svobodna igrivost skrbno izbranih sestavin in prav v vsakem ima vsaj ena sestavina istrski karakter. Koktejle sva z Jašem snovala na kakovostnih sestavinah in se tudi poigrala z imeni, ki narekujejo sproščenost in dostopnost pijač, za katero sva še danes prepričana, da je pomembna pri slovenskem potrošniku v gastronomiji, ki še vedno spoznava nove okuse, tehnike in na prvi pogled nenavadne kombinacije, tako na krožnikih kot tudi v kozarcih. Gastronomske novitete se tako prepletajo med jedmi in pijačo, a na popolnoma sproščen način, ki je za gosta svojevrstno popotovanje v džunglo. Okusi Istre, ki smo jih poskušali predstaviti v koktejlih, so figa, pomaranča, malina, refošk, tartuf, rožmarin, sivka in še kateri.</p>

<p><span style="font-size: 10pt;"><strong>Bakin Tiki </strong></span></p>
<p><span style="font-size: 10pt;">Inspiracija za ta tiki je prišla iz sestavine, ki je nekoliko nenavadna za koktejle – marmelada. Marmelade so odličen in predvsem konstanten vir okusa, ki ga lahko uporabimo ne samo kot namaz na kruh, ampak kot sladilo v marsikaterem koktejlu, limonadi, ledenem čaju, vroči čokoladi &#8230; Marmelade Bakine Tajne smo uporabili zaradi izjemne kakovosti surovin in konsistence izdelka. Za osnovno sladilo smo tako izbrali sirup, narejen iz malinove marmelade Bakina Tajna, ki se odlično poveže s sveže stisnjenim sokom limete, mešanico staranih rumov, poseben pomarančni liker in kanček lešnikovega sirupa. Postrežen pa je v posebnem tiki kozarcu, ki spominja na jezno polinezijsko babico. Jaš nam je zagotovil, da je to eden od »bestsellerjev«.</span></p>

<p><span style="font-size: 10pt;"><strong>Lost &amp; Found </strong></span></p>
<p><span style="font-size: 10pt;">Ideja za ta koktejl je neposredno povezana z mantro lokala, pri kateri se gostje izgubijo in potem spet najdejo. Gre za edinstveno mešanico dveh belih rumov, francoskega zeliščnega likerja Chartreuse, ingverjevega piva Thomas Henry Spicy Ginger, limone in posebnega »istrskega shruba«. Shrubi so sirupi z dodatkom kisa. V tem boste poleg belega balzamičnega kisa in sladkorja našli še pomarančno marmelado, sivko in rožmarin, ki dodajo koktejlu poseben istrsko obarvan priokus. Kot narekuje samo ime koketjela, se boste v kompleksnem okusu izgubili in nato spet našli.</span></p>

<p><span style="font-size: 10pt;"><strong>Istrian Sour</strong></span></p>
<p><span style="font-size: 10pt;">Ta koktejl bi lahko uvrstili že bolj med klasike, saj gre za igrivo izpeljanko koktejla »New York Sour«, kjer smo za alkoholno osnovo izbrali čudovit viski Woodford Reserve Rye, ki smo ga osladili s pomarančno marmelado Bakine Tajne in uravnotežili s sveže stisnjenim limoninim sokom. Ko se koktejl dobro pretrese v shakerju in precedi v viski kozarec, se za zadnji pridih koprskega okoliša doda refoškova krema, ki jo pripravljajo posebej v sifonu.</span></p>

<p><span style="font-size: 10pt;"><strong>Figlet </strong></span></p>
<p><span style="font-size: 10pt;">Zabavna kombinacija figovih listov in vipavskega vina zelen v izpeljanki »whiskey sour«. Figlet je verjetno eden izmed najbolj zabavnih koktejlov na meniju, saj vsebuje nenavaden domač sirup figovih listov, ki ima značilno noto po zeleni, sveže utrgani figi. Ta se zelo lepo poda s svežino limone in sladko-vaniljastim karakterjem ameriškega viskija Gentleman Jack. Z dodatkom vipavskega vina zelen pa pridobi še nekoliko globljo kompleksnost in svežino. Za dekoracijo uporabijo, jasno, figov list.</span></p>

<section  class='av_textblock_section av-k2adath9-1b88cc642b4119922b2bcacb79ad1a21'  itemscope="itemscope" itemtype="https://schema.org/BlogPosting" itemprop="blogPost" ><div class='avia_textblock'  itemprop="text" ><p>To je le nekaj hišnih koktejlov, za katere verjamemo, da bodo postali klasika lokala, ki se je odpiral v najbolj nepredvidljivih časih za gostinstvo, po obdobju, ko se je življenje počasi začelo vračati v gostinstvo, v začetku meseca junija. Da, Džunglo so spravili v pogon v času, ko so bili nekateri gostinci še vedno v precepu, ali bodo sploh odpirali lokale, ko so se spraševali, kakšna bo sezona in koliko časa bo ta pomembna gospodarska panoga sploh še živela &#8230; Džungla je zaživela in več kot z odliko preživela poletno sezono z upoštevanjem vseh predpisov in predvsem s trdnim prepričanjem celotne ekipe v projekt. Vsak posameznik diha isti navihan džungelski zrak, dodaja delček svoje karizme in karakterja v prostor ter se trudi pričarati resnično nepozabno izkušnjo vsem gostom tega gastro bara. Z dobro zamišljenimi tematskimi dnevi vezanimi na za tisti dan specifično ponudbo jedi, s posebnimi pijačami, vrhunsko selekcijo vin in celo koktejli »to go«, so dodobra poskrbeli za edinstveno kulinarično ponudbo za vse gurmane z Obale in od drugod. Adaptacija na trenutne razmere, pozitivna naravnanost in progresivno kulinarično razmišljanje so očitno recept za uspeh. Le tako naprej, drago pleme Džungle iz Vojkovega nabrežja 6, Koper.</p>

Natančneje Dufftown. Majhno mestece v osrčju območja imenovanega Speyside na severnovzhodnem delu otoka. Tukaj se je pred več kot 120 leti začela zgodba viskija, ki nosi ime Glenfiddich, ki se iz stare keltščine prevede v dolino jelena. Dovolite nam, da vam predstavimo njihovo noviteto »fire &amp; cane«, prvi dimljeni Glenfiddich, ki se skriva pod številko štiri v seriji eksperimentalnih viskijev in izjemno »enostaven« koktejl »Glenfiddich Highball«, ki je zaradi svoje enostavnosti sestavin hkrati izjemno kompleksen.</strong></p>
<p><strong>Glenfiddich Experimental Series</strong></p>
<p>Glede na to, da smo pred časom že pisali o Glenfiddichu in o »škotskem dialogu«, se bomo tokrat posvetili tematiki novitet v škotski zgodbi o viskiju in nekakšnem novem pogledu na to, kaj single malt viski je ter v katero smer gre. Fire &amp; Cane je že četrti primerek eksperimentalne serije Glenfiddich, ki premika meje in se giblje zunaj tradicionalnih gabaritov industrije enosladnih viskijev. O tem, da so pri Glenfiddichu pravi pionirji izdelave viskijev in zagovorniki novitet, smo priča že vsaj trideset let. David Stewart, sedaj upokojeni »malt master« destilarn Glenfiddich in Balvenie, ki je skrbel za nadzor kakovosti v obeh hišah viskija, je tako že pred več kot 30 leti inoviral dvojno maturacijo – postopek, po katerem se viski, ki se je staral glavnino časa v enem tipu soda, prelije v drug sod in tam dobi želeni zaključek okusa. Pred približno petimi leti pa so se v Glenfiddichu lotili njihove nove in inovativne serije poimenovane »the experimental series«. Prvi v tej seriji je bil plod kolaboracije lokalnega mikro pivovarja in malt masterja, ki sta s skupnimi močmi naredila viski, ki ima zaradi prepojenega hrasta s posebej za Glenfiddich zvarjenim IPA pivom na koncu poseben hmeljast priokus. Drugi je poimenovan projekt XX, kar narekuje število 20. 20 strokovnjakov in ljubiteljev Glenfiddicha je izbralo svoj sod v posebnem skladišču in te so »poročili« med seboj v posebno izdajo. Te serije sodov se mešajo med seboj in bodo na voljo, dokler zaloge teh viskijev ne bodo pošle. Tretja različica je bila zelo omejena serija 21 let staranega viskija, ki so ga dokončali v sodih, kjer se je prej staralo kanadsko ledeno vino – različica se imenuje »Winter Storm«.</p>
<p><strong>Glenfiddich Fire &amp; Cane</strong></p>
<p>Najnovejši eksperiment v seriji teh resnično unikatnih viskijev je Fire &amp; Cane. Ime narekuje povezavo med ognjem in trsjem, kot se tudi direktno prevede, same karakteristike viskija ustekleničenega v tradicionalno, zaobljeno trikotno steklenico. Kot nam je proizvajalec zaupal, tudi v destilarni Glenfiddich uporabljajo prekajen ječmenov slad za proizvodnjo viskija, kar je sicer za njihov stil zelo nenavadno, saj so tradicionalno znani po sadnih, nežnih, a kompleksnih viskijih. Prekajen ječmenov slad sicer pridobivajo proizvajalci tako, da ga po procesu germinacije (kaljenja) sušijo nad vročim dimom, ki se proizvaja ob gorenju šote. Tradicionalno se slad suši v stolpu z značilno pagodasto streho, imenovanem »kiln tower«. Z dodajanjem šote v peč in časom dimljenja lahko tako proizvajalci dozirajo količino dima in fenolov, ki dajo sprva sladu in kasneje viskiju značilen dimljen priokus. Več časa kot je ječmen izpostavljen šotnemu dimu in več šote kot se uporabi, bolj dimljen viski bomo okusili. Šoto so uporabljali na Škotskem za gorivo, saj je imajo v izobilju, bolj pogosto uporabljena pa je bila na krajih, kjer ni bilo dostopa do premoga in koksa – ta se namreč ne kadi in posledično dobimo nežen, neprekajen viski. Toliko o delu viskija, ki ga najdemo v imenu pod besedo »fire« in je vezan na dimast karakter, kakršnega ga ima. Drugi del, »cane«, pa se navezuje na trs. Bolj natančneje na sladkorni trs, ki je osnovni derivat za proizvodnjo ruma. Rum v tem viskiju naredi tisti slovit »finish« oziroma zaključek, ki se zgodi, potem ko malt master Brian Kinsman med seboj poroči tako dimljene različice viskijev kot različice starane v bourbon sodih in jih za kratko obdobje da odležati v sode, kjer se je prej staral rum. Končni produkt ima rahel pridih vonja odprtega ognja lesa in sladkobo škotske karamele, ki se prepletata v delikatni kompleksnosti tudi v okusu, ki pa ima tudi izrazito zeleno noto in noto pečenega jabolka, ki je značilna za Glenfiddich. V razmeroma dolgem pooskusu se čuti aromo karamele in rahlega dima.</p>

<p>Highball narekuje univerzalni način postrežbe različnih žganih pijač v visok in ozek kozarec z ledom in sodavico. Sam kozarec nosi enako ime. Za osnovo lahko vzamemo po navadi različne viskije, gine, vodke, konjak in vinjake, najpopularnejša izbira pa so po navadi single malt viskiji ali mešani. Ti preprosti koktejli so čudoviti prav zaradi svoje enostavnosti sestavin in priprave. A ravno v preprostosti se skrivajo detajli, ki lahko naredijo ta koktejl vrhunski ali pa slabo različico vodenega destilata. Poskrbeti moramo za kakovostno osnovo, v našem primeru saden 12-letni Glenfiddich, dobro ohlajeno in primerno karbonirano s sodavico ter velike polne kocke ledu. Vse skupaj, v pravilnem razmerju, tvori vrhunski highball, v katerem se zazna značilen sadno-sveži karakter Glenfiddich 12 in svežino drobnih mehurčkov sodavice. Za dodaten parfum pa bomo dodali lupino limone.</p>

<p><strong>Dekoracija:</strong> Sveža lupina limone</p>
<p>Priprava: Visok long drink (highball) kozarec zvrhamo napolnimo z ledenimi kockami in ga ohladimo. Odvečno vodo odcedimo. Čez to prelijemo 50 ml Glenfiddich viskija in zvrhamo s sodo Thomas Henry tako, da se viski dobro pomeša – pribl. 100 ml. Na koncu s sveže odrezano limonino lupino parfumiramo vrh kozarca in jo uporabimo tudi za okrasitev tako, da jo položimo na vrh kozarca. Koktejl postrežemo brez slamice in uživamo.</p>
<p><em><strong>Veliko puristov pravi, da se dobrega viskija naj ne bi z ničimer mešalo ali vanj karkoli dodajalo. Da je najboljši takšen, kot je. Pri Glenfiddichu to zagotovo drži. Ampak se je v duhu časa, razvoja in eksperimenta tudi ta mentaliteta počasi opustila, načini postrežbe pa se temu primerno spreminjajo in ravnajo po potrebah posameznikov. Ker ne nazadnje, viski uživajte natanko tako, kot vam najbolj prija. Vsekakor pa to zlato kapljico uživajte kar se da odgovorno.</strong></em></p>

Na osnovi legendarne recepture klasičnega likerja s 56 zelišči so mojstri botanike in destilacije ustvarili novo različico in celo novo kategorijo med zeliščnimi likerji. Po načinu uživanja ga približamo bolj k dobrim vinjakom in viskijem kot likerjem, kako in zakaj, pa boste izvedeli v spodnji kolumni.</strong></p>
<p><strong>Manifest</strong></p>
<p>Zeliščni liker Jägermeister zaznamuje izjemna in kompleksna aroma, ki jo po posebnem postopku maceracije kar 56 zelišč in začimb, ki prihajajo iz vsega sveta, liker pridobi po strogo varovanem postopku izdelave. Gre za mešanico različnih maceratov, ki jih na koncu združijo v ogromnih hrastovih sodih, kot protiutež močnemu okusu pa dodajajo nekaj karamele kot sladilo in barvilo pijače. To je osnova tudi za izdelavo Manifesta, pri kateri pa se uporablja dodatni macerat na osnovi nevtralnega žitnega žganja in se dodatno stara v manjših hrastovih sodčkih. Končna mešanica različnih maceratov se nekoliko osladi s karamelo, a manj kot Jägermeister, ima pa tudi tri odstotke alkohola več, kar pijačo izpopolni v okusu in aromi. Manifest je tako prefinjeno izpopolnjen, bolj suh in zaradi dodatnega staranja še bolj gladek. Zato pivca spominja na srkanje viskija ali prefinjenega »zeliščnega konjaka« med samim uživanjem in niti ne toliko na ledeno ohlajeni »shot« Jägermeistra, kot smo ga najbolje vajeni. Zaradi svoje prefinjenoti, zaokroženoti in kompleksnosti se ga postreže kar čistega ali na večjem kosu ledu, najbolj pravilno pa tako, da preko ledu Manifest samo prelijemo, da v kozarec steče ohlajena pijača z nekaj vode, ki jo je prevzela z ledu. Tako ali drugače, predlagamo vam, da poiščete svoj način uživanja tega edinstvenega izdelka.</p>
<p><strong>Manifest Negroni</strong></p>
<p>Ker je Manifest resnično nekaj posebnega in kompleksnega, kar kliče po tem, da bi ga zmešali v katerega od čudovitih koktajlov. Prvi, ki smo ga morali pokusiti, je v kombinaciji z ginom in rdečim vermutom, nekakšna variacija koktajla Negroni, pri katerem smo grenčico zamenjali za Manifest. Nekoliko smo spremenili recept in nastala je odlična manifestacija kompleksnih zelišč in nežne grenkobe.</p>
<p><strong>Sestavine:</strong></p>
<ul>
<li>40 ml Manifest</li>
<li>20 ml gin Hendrick’s</li>
<li>20 ml Sweet Vermouth (Punt e Mes, Antica Formula, Martini Rubino &#8230;)</li>
</ul>
<p><strong>Dekoracija:</strong> Lupina rdeče grenivke</p>
<p><strong>Priprava:</strong> V okrogel viski tumbler s prostornino pribl. 3 dl odmerimo Manifest, gin Hendrick’s in rdeči vermut (tukaj priporočamo suho različico, ne s kako izstopajočo vinsko aromo, zato da prepusti drugim delikatnim zeliščnim notam osrednjo vlogo). Dodamo ledene kocke do dveh tretjin višine kozarca in začnemo z mešanjem z barsko žlico v krogih (»stiring«). Mešamo toliko časa, da se pijača ohladi in rahlo razvodeni. Po pivčevih preferencah s tem določamo moč okusa, saj s podaljševanjem časa mešanja tudi povečujemo odstotek vode v koktajlu, kar ga naredi bolj pitnega, a hkrati tudi bolj »vodenega«. Dodamo še nekaj ledenih kock, tako da je kozarec poln. Na koncu koktajl odišavimo z lupino rdeče grenivke, ki jo uporabimo tudi za dekoracijo koktajla.</p>

<p>Gilbert je besedna igra in povezava, ki smo jo vzpostavili s klasičnim koktajlom, imenovanim Gimlet. Gimlet, sicer na bazi gina in z dodatkom limetinega sirupa, je bila osnovna ideja za našo izpeljanko z Manifestom. Zeliščni gin smo tako nadomestili z zeliščnim Manifestom in namesto limetinega sirupa smo dodali domači limonin cordial – nekakšen limonin sirup. Z nekaj obrati v kozarcu za mešanje se ti dve sestavini povežeta v izjemen koktajl, v katerem izrazite note začinjenosti nekoliko ublaži in ovije svežina limone. Tako je nekaj generacij kasneje Gimlet dobil nemškega sorodnika Gilberta iz Wolfenbüttla.</p>
<p><strong>Sestavine:</strong></p>
<ul>
<li>50 ml Manifest</li>
<li>2 barski žlički Limonina cordiala*</li>
</ul>
<p><strong>Dekoracija:</strong> Lupina limone</p>
<p><strong>Priprava:</strong> *Pred začetkom priprave koktajla se lotimo preproste priprave limoninega cordiala. V posodo odmerimo 300 g belega sladkorja in 2 dl sveže stisnjenega limoninega soka, ki smo ga precedili skozi fino cedilo. Vse skupaj postavimo na kuhalnik in kuhamo toliko časa, dokler ne zavre. Pazimo, da se ne opečemo in da sirup ne skipi! Posodo odstavimo s kuhalnika in dodamo lupino dveh limon v vroč sirup (priporočamo uporabo neškropljenih limon). Premešamo in pokrijemo s pokrovko ter počakamo, da se sirup počasi ohladi. Ko je sirup hladen, ga precedimo in shranimo v sterilni steklenici v hladilniku. Gilbert koktajl pripravljamo v kozarcu za mešanje ali katerem od vrčkov z izlivnikom. V ohlajen kozarec za mešanje odmerimo Manifest in dodamo kanček sirupa. Opcijsko lahko dodamo tudi čajno žličko sveže stisnjenega limoninega soka – to je odvisno od kislosti in kakovosti limon, ki ste jih uporabili za sirup. Dodamo ledene kocke in z barsko žlico mešamo (»stiring«) toliko časa, dokler se pijača ne ohladi in rahlo razvodeni. Pijačo nato precedimo v nizek viski kozarec napolnjen z ledenimi kockami ali večjo ledeno kocko. Na koncu koktajl odišavimo z lupino limone, ki jo stisnemo nad vrhom koktajla za dodaten pridih svežine. Kot vedno, vas nagovarjamo k zmernemu manifestu pivskih užitkov, ki jih nudi nadgradnja svetovno znanega zeliščnega likerja. Na zdravje!</p>

Tokrat vam bomo predstavili italijansko verzijo penine, bolj natančno prosecco, ki prihaja iz uspešnega družinskega podjetja Bottega. Okušali bomo dve čudoviti variaciji penin, ki jih proizvajajo, Bottega Gold in Bottega Rosé Gold ter na koncu dodali še odličen in enostaven koktajl z dodatkom teh posebnih mehurčkov za popestritev praznikov. Naj bo novo leto bleščeče in lahkotno, kakor so tudi Bottegovi očarljivi mehurčki.</strong></p>
<p><strong>Bottega Gold</strong></p>
<p>Tudi v Slovenijo počasi prihaja trend tujih penečih vin, tako šampanjcev kot tudi prosecca. Prosecco je namreč podobno kot šampanjec penina, ki ima številne zakonsko določene omejitve povezane s proizvodnjo, grozdnimi sortami in najpomembneje, omejeno je na določeno območje. Prosecco boste našli pod dodatnim zaznamkom DOC in DOCG. DOC je širše območje, ki se razteza od Furlanije do Benečije (Veneto). Tu pa je še prav poseben košček pokrajine, kjer najdemo tako imenovan DOCG. Ta se nahaja na gričkih, severno in v neposredni bližini Trevisa. Glavna razlika med DOC in DOCG je lega trt in krajina, kjer rastejo. DOC velja za bolj ravninski svet, medtem ko je DOCG na gričevnati legi, kjer pridobijo manj, a bolj kakovostno grozdje. Glavna sorta za izdelavo prosecca je glera, katere delež v mešanici vin mora zadoščati vsaj petinosemdeset odstotkom vsebine. Preostalo so lahko podobne bele sorte, če se vinar tako odloči. Potem ko vinar uspešno proizvede prosecco pod določenim standardom, ga pred polnitvijo in prodajo oceni še posebna komisija, ki poda zanjo potrditev o ustreznosti izdelka, glede na količino sladkorja, pH, kemično analizo in celo videz steklenice. Bottega Gold je poseben primer, saj vsebina steklenice, penina, dosega vse standarde DOCG, vendar komisija zaradi videza steklenice nikoli ne odobri uporabe te oznake, ampak »zgolj« DOC. Gre za lahkotno, sadno penino, ki je čudovita samostojno ali pa celo v kombinaciji s različno hrano, na primer morsko. Je Brut, kar pomeni relativno nizko stopnjo sladkorja in izjemno pitnost. Mnenja smo, da je to idealna penina za vsako priložnost, ki bo ustrezala tako začetnikom kot tudi bolj izkušenim uživačem penečih vin. Poleg tega pa je steklenica resnično nekaj posebnega, saj izstopa s svojim očarljivim zlatim sijajem.</p>
<p><strong>Bottega Rosé Gold</strong></p>
<p>Različica Rose gold je prava posebnost med peninami, ki izvirajo iz tradicionalnega območja prosecca. Ne gre za prosecco, saj je rosé penina in vsebuje določen odstotek modrega pinota iz Lombardije. Po krajši maceraciji dobi nežno roza barvo in nekoliko bolj sadno-jagoden priokus, ki se poda takšni vrsti penine. Nižja sladkorna stopnja, klasifikacije Brut, je še ena od različic iz hiše Bottega, ki jo opišemo lahkotnostjo, a hkrati posebnostjo okusa in videza. Zelo lepo uravnotežena je tudi kislina, ki jo naredi še toliko bolj primerno za širšo publiko. Prepričani smo, da bo zadovoljila večino vaših gostov, ki so bolj »za rosé« kot klasične penine.</p>

<p class="p3">Ta razmeroma preprost koktajl je pravzaprav izpeljanka iz slovite klasike French 75, ki jo je pariški barman Henry Tépé iz Henry Bara poimenoval po popularnem orožju, kalibra 75 mm, ki ga je med prvo svetovno vojno uporabljala francoska vojska. Receptura se je v času nekoliko spreminjala, a v osnovi gre za kombinacijo gina, limonovega soka in sladkorja, v kozarec do vrha dolijemo penino – pred stotimi leti in v Parizu pa s šampanjcem. To recepturo smo nekoliko dodelali in jo prilagodili Bottegi Gold. Je kot nalašč za vse ljubitelje koktajlov s penino z mislijo na to, da ne bo vse ravno »spritz«.</p>

<p class="p3">V ročni mešalnik odmerimo sveže stisnjen limonov sok in gin Hendrick’s in dodamo sladkorni kocki, ki ju z žlico zdrobimo in čim bolj raztopimo. Dodamo zadosti ledenih kock in mešanico dobro pretresemo. Dvojno precedimo koktajl bazo v ohlajen koktajl kozarec in dolijemo penino. Zaradi preostalih sestavin predlagamo, da penine ne dodajate več kot deciliter, a vseeno, vam prepuščamo vašo presojo glede količine. Potem ko smo dodali penino, koktajl okrasimo z limonino lupino, ki jo postavimo v koktajl.</p>

<section  class='av_textblock_section av-k2adath9-1b88cc642b4119922b2bcacb79ad1a21'  itemscope="itemscope" itemtype="https://schema.org/BlogPosting" itemprop="blogPost" ><div class='avia_textblock'  itemprop="text" ><p class="p1"><strong>V tej poletno obarvani kolumni smo za vas pripravili nekaj popolnoma enostavnih in lahkotnih koktajlov, ki tako glede priprave kot uživanja niso zahtevni. V smislu priprave zanje ne potrebujete nobenega pretiranega tehničnega predznanja, v smislu lahkotnosti uživanja pa temeljijo na svežini in nižjem odstotku sladkorja v končnem produktu. Vse skupaj smo imeli priložnost soustvarjati in predstaviti v mirnem in izjemno lepo urejenem resortu Garden Village na Bledu. V tem zelenem ambientu, kjer najdemo restavracijo Vrtnarija, glamping šotore in hiške na drevesu, imajo prav tako svoj lastni veliki vrt, kjer gojijo vse, kar potrebujejo za kuhinjo in bar. Koncept »z vrta na krožnik« smo tokrat prenesli tudi v koktajle.</strong></p>
<p><strong>Hendrick’s Garden Rickey</strong></p>
<p>Rickey je pravzaprav tip koktajla, pravi košček zgodovine uživanja mešanih pijač s konca 19. stoletja, ko je Joe Rickey, popularna politična osebnost tistega časa v ZDA, v Shoo’s baru v Washingtonu prvič naročil mešanico žganja in sodavice s polovico limete. Joe in očitno tudi pijača kot taka sta inspirirala mnoge barmane po ZDA in kasneje tudi po svetu, da so pričeli ponujati raznorazne »Rickey« koktajle. Več kot 130 let od prvega zapisa o tem koktajlu ta preprosti, sveži in sladkorno nezahtevni miks zopet osvaja svet. Nam najljubša kombinacija je bila mešanica s trenutno zelo popularnim ginom. Za osnovo smo uporabili Hendrick’s, ki s svojo izjemno kompleksnostjo in zaokroženim okusom v tem koktajlu lepo izstopa. V Garden Village različici pa smo si za dodatno aromo in dekoracijo prisvojili še cvet kapucinke in cvetove sivke, ki so svežemu okusu dodali cvetlično noto.</p>
<p><strong>Sestavine:</strong></p>
<ul>
<li>50 ml Hendrick’s Gin 1</li>
<li>00 ml Thomas Henry Soda</li>
<li>1/2 limete</li>
</ul>
<p><strong>Dekoracija:</strong> Rezina kumare in jedilno cvetje (na sliki: kapucinka in sivka)</p>
<p><strong>Priprava:</strong> Ker so bili »Rickey« koktajli tradicionalno postreženi v visokem, »long drink« kozarcu, bomo takšnega uporabili tudi mi za pripravo našega napitka. Napolnimo ga z ledenimi kockami, odmerimo Hendrick’s in iztisnemo sok polovice limete vanj. Ta polovica je okviren normativ; saj veste, limete so lahko ali zelo suhe ali sočne. Nagovarjamo vas, da o svežini koktajla presodite sami. Lupino polovice limete bomo uporabili tudi za okus, in to tako, da jo, ko smo iz nje iztisnili sok, postavimo na led v kozarcu. Limeto ter mešanico soka in gina na koncu prelijemo s sodavico. Pomembno je, da je ta kvalitetna, saj zagotavlja še dodatno svežino koktajlu. Dolijemo jo do vrha, približno deciliter, odvisno od kozarca. Vse skupaj na rahlo premešamo z dolgo žlico tako, da lupino limete potopimo v napitek. Kot dekoracijo poleg polovice limetine lupine pri vrhu zataknemo še rezino kumare, ki bo poudarila svežino gina Hendrick’s. Dodatno pa koktajl okrasimo z jedilnimi cvetovi.</p>

<p>Coffee Tonic je najnovejša različica polnil in tonikov blagovne znamke Thomas Henry, ki je takoj po izidu obnorela barmane po svetu. Gre za unikatno kombinacijo klasičnega tonika, ki vsebuje kinin, arome citrusa in kot kavno polnilo t. i. »cold brew«. Ta hladno ekstrahirana kava v harmonični kombinaciji s tonikom daje edinstven okus, ki se odlično meša z različnimi pijačami ali uživa samostojno z rezino pomaranče. Za prvi koktajl s Thomas Henry Coffee Tonicom, ki je izjemno preprost za pripravo, smo izbrali začinjen karibski rum Sailor Jerry. Kombinacija začinjenega ruma in kave je znana že iz drugih koktajlov, z dodatkom svežine tonika pa se jo podaljša v fantastičen »long drink«. Začinjen, svež, s pridihom kave in z aromo ruma ter rahle grenčine tonika ta koktajl vsebuje le okoli štiri grame sladkorja.</p>

<p><strong>Dekoracija:</strong> dva krhlja limete</p>
<p><strong> Priprava: </strong>V večji viski kozarec ali »long drink« odmerimo rum Sailor Jerry in nato zvrhamo kozarec z ledenimi kockami. Pod kotom dolijemo Thomas Henry Coffee Tonic tako, da se zmeša z rumom, hkrati pa pazimo, da ohrani čim večji delež mehurčkov. Za dekoracijo in okus dodamo dva krhlja limete, ki ju ne stiskamo v pijačo.</p>
<p><strong>Jägermesiter &amp; Coffee Tonic</strong></p>
<p>Zvesti bralci revije se boste morda spomnili lanskoletne kolumne na temo kave. V njej smo pisali tudi o koktajlu, ki združuje »cold brew« kavo in zeliščni liker Jägermeister v tako imenovani »No Chocolate« koktajl, harmonično, zelo lepo povezano pijačo. Tokratni koktajl pa poleg omenjenih elementov vsebuje še tonik, ki je seveda gaziran. Preprosta kombinacija, ki vas bo prepričala s prvim požirkom.</p>

<p><strong>Priprava:</strong> Enako kot pri prejšnji mešanici z rumom v večji viski kozarec ali »long drink« odmerimo Jägermeister in nato zvrhamo kozarec z ledenimi kockami. Pod kotom dolijemo Thomas Henry Coffee Tonic. Pomemben faktor svežine pa predstavlja lupina limone, ki jo stisnemo nad vrhom koktajla tako, da eterična olja padejo na vrh napitka. Koktajl na koncu z isto lupino tudi okrasimo.</p>
<p><strong> Garden Walk</strong></p>
<p>Ta brezalkoholni koktejl je nastal v trenutku inspiracije na sprehodu skozi bogat vrt Garden Village resorta. S kolegico Uršo iz kuhinje restavracije Vrtnarije smo se sprehodili od korita do korita ter po celotni poti, kjer je njihov agronom zasadil različna zelišča, jagodičevje in sadno drevje. Urša nam je razložila, da prav vse, kar potrebujejo v kuhinji gojijo namensko v rastlinjaku, gredah in okolici, da se le redke stvari naročujejo od okoliških kmetij. Tako nam je razložila nekaj o vseh zeliščih, ki smo jih nabirali za spodnjo brezalkoholno osvežitev. Osredotočili smo se na predvsem na osvežilne note, ki smo jih pridobili iz mešanice zelišč kot so maroška meta, melisa, ananasov žajbelj, limonska trava, cvetovi japonskega šipka, &#8230; Poleg izjemno aromatičnih zelišč smo nabrali tudi domače robide, maline in črni ribez. V kombinaciji s kavliterno sodavico, svžim citrusom in domačim bezgovim sokom smo dobili odličen poletni nadvse osvežilni brezalkoholni koktejl.</p>
<p><strong>Sestavine</strong>:</p>

<li>25ml Sveže stisnjen limonin in limetin sok (mešanica 50:50)</li>
<li>20ml Domač bezgov sirup (šabesa)</li>
<li>1 steklenička (2dl) Thomas Henry Soda</li>
</ul>
<p><strong>Dekoracija/vrtne sestavine:</strong></p>
<ul>
<li>Zelišča: maroška meta, melisa, ananasov žajbelj, limonska trava, cvetovi japonskega šipka&#8230;</li>
<li>Jagodičevje: robide, maline in črni ribez</li>
</ul>
<p>Priprava: V »baloon glass« oziroma bučkast kozarec na peclju s prostornino preko štirih decilitorv damo nabrana zelišča. Naj vas ob tem spodbudimo, da lahko uporabite skoraj da katero koli sveže zelišče, ki vam raste na vrtu ali ga dobite v trgovini (npr. Timijan, rožmarin, poprova meta, žajbelj, koper, &#8230;). Nato dodamo mešanico limone in limete ter bezgov sirup. Če boste uporabljali domačega poizkusite končni produkt in ga dodajte nekoliko več, če vam bo napitek presvež. Nato zvrhamo kozarec z ledenimo kockami in vse skupaj zalijemo z nekaj Thomas Henry sodavice. Premešamo z dolgo žlico tako, da vse skupaj povežemo. Dodamo še nekaj kock ledu in prestalo sodavico. Okrasimo vrh kozarca s cvetovi zelišč in črnim ribezom, ki pusti čudovito aromo. Kot dodatek lahko na dolgo leseno paličico nabodemo nekaj jagodičveja, kot so robide in maline ter jih dodamo v koktej. Palčka služi kot mešalo, dekoracijo in tudi manjši prigrizek, ki bo teknil ob osvežitvi koktejla.</p>

<section  class='av_textblock_section av-k2adath9-1b88cc642b4119922b2bcacb79ad1a21'  itemscope="itemscope" itemtype="https://schema.org/BlogPosting" itemprop="blogPost" ><div class='avia_textblock'  itemprop="text" ><p><em><strong>V tokratni kolumni smo združili moči z izvrstnim šefom Ivom Tomšičem iz priznanega ljubljanskega Steak Housa Sorbara, s katerim smo za vas pripravili štiri čudovite kombinacije njegovih kreacij na krožniku in naših, postreženih v kozarcu. Gre za koncept povezovanja okusov med hrano in pijačo, ki je nastal na ideji, da se širši javnosti predstavi t. i. »food pairing« na drugačen način, ne samo v tradicionalnih kombinacijah z vinom. Spremljava jedi s pijačo obstaja verjetno, odkar poznamo obed. Različne vrste pijač ob jedeh se razlikujejo glede na njihov namen, od nekdaj poznamo na primer aperitivne in digestivne pijače. Aperitivne naj bi pospeševale tek in človek naj bi jih užival pred jedjo, digestivne pa po jedi. Po navadi je šlo za kakšen grenek liker, zeliščno žganje in na koncu konjak, rum ali desertno vino, kar je z vidika tradicionalnega protokola obeda popolnoma sprejemljivo in nekako logično. Med jedmi je bilo običajno postreženo vino. Danes in v času »moderne kulinarike« pa so se te meje zabrisale. Ne ločujemo več tako strogo aperitivnih od digestivnih pijač ter sladkih od svežih in jih ne postavljamo več ob jedi oziroma v času postrežbe, kjer oz. ko bi tradicionalno morale stati. Fokusiramo se bolj na t. i. »food pairing«. Iščemo harmonije v okusih, ki se prepletajo v kombinacijah med hrano in pijačo izven tradicionalističnih okvirov. V našem primeru boste spoznali tri jedi, pri katerih smo uporabili nekoliko drugačne pijače, kot bi si jih vi zamislili ob svoji tipični »steak« večerji – šampanjec, dva različna koktajla in ameriški viski ob sladici.</strong></em></p>
<p><strong>Wagyu ježki in Piper-Heidsieck</strong></p>
<p><strong>Ivo:</strong> Wagyu govedina z morskimi ježki, smrekovo olje in dashi krema</p>
<p><strong>Jan:</strong> Piper-Heidsieck Brut</p>
<p>Za prvo jed je Ivo pripravil zanimivo kombinacijo surove wagyu govedine iz Kjota, iz Japonske, ki ima status ene najbolj cenjene govedine na svetu, in jadranskega morskega ježka. Vse skupaj je povezal s smrekovim oljem in dashi kremo – osnova je tradicionalna japonska juha iz soje, sušene ribe in morske alge. Že is sestavin lahko razberemo, da je v jedi veliko umami okusa, na katerega smo se v kombinaciji z izbrano pijačo navezali. Med pijačami smo se tokrat odločili za preprost kozarec šampanjca Piper-Heidsieck Brut. Gre za suho, sveže-sadno in izjemno uravnoteženo pijačo, polno finih mehurčkov, ki jo priporočamo zraven ribe, posebno morske, v kombinaciji z neko umami spremljavo – v našem primeru so to morski ježek in alge v dashi kremi.</p>
<p><strong>American Cowboy in Chef ’s Sour</strong></p>

<p>Brez težave lahko trdimo, da je ena od Ivotovih specialitet v Sorbari priprava mesa. Ko govorimo o pripravi mislimo seveda tudi na zorjenje, ki je ključni faktor zagotavljanja žlahtnih okusov in pa predvsem mehkobe mesa. Izbrani kos mesa za to kombinacijo s koktejlom je ameriški »Cowboy« steak, ki je en najbolj marmoriranih delov goveda. Z marmoracijo mislimo seveda na razporeditev maščobnega tkiva, ki da zrezku po pripravi okus in sočnost. V sorbari sami zorijo svoje meso in imajo nad tem popolno kontrolo kakovosti. Po pečenju, priporočamo vsaj medium ali »medium-rare«, steak servirajo na topli plošči z odmačo BBQ omako in omako iz borovnic in gorčičnih semen. Poleg takšnega sočnega in bolj mastnega kosa mesa, ki je pečen na oglju se prileže nekaj osvežilnega. Nekaj z nekoliko več kisline in svežine, kar nam bo topilo občutek maščobe v ustih. Poleg tega, pa se izbrana kombinacija viskija in limone lepo poda s karameliziranim zrezkom.</p>

<p><strong>Dekoracija:</strong></p>

<li>Havajska vulkanska sol</li>

<p><strong>Priprava:</strong> To različico »whiskey sour« koktejla sem posvetil Ivu, saj obožuje te vrste koktejlov z veliko svežine. »Chef’s sour« pa sem tokrat pripravil na nekoliko drugačen način kot s shake-anjem. Sestavine odmerimo v blender in dodamo 4 kocke ledu in blendamo. Te štiri kocke ledu bodo koktejl ravno prav razvodenele in ga ohladile, hkrati pa bo beljak povezal pijačo v kremsto strukturo. Blendamo toliko časa, dokler se kocke ne raztopijo, nato koktejl fino precedimo v ohlajen (predlagamo, da je zamrznjen) kozarec za penino, ki smo ga predhodno okrasili z havahsko vulkansko soljo. Ta delno slan rob kozarca nato kombiniramo z uživanjem koktejla, saj se sol lepo poda s svežino.</p>
<p><strong>Suho zorjena račka in račji Boulevardier</strong></p>

<p class="p1"><b>Jan: </b>Račji Boulevardier</p>
<p class="p3">V Sorbari se radi pohvalijo, da so edini, ki imajo v Sloveniji v ponudbi suho zorjeno raco. Resnično bi bilo škoda, da v kombinaciji rahlo pečenega suho zorjenega račjega fileja nebi postregli nečesa posebnega. Poleg svežine, ki jo jedi doda travniška detejla smo pomislili na nekoliko bolj grenko in kompleksno komponento kot pijačo spremljave. Prav tako, pa je to edini od obeh koktejlov, kjer smo povezovalno noto poudarili tako, da smo komponento okusa glavne jedi praktično prenesli v koktejl. To smo naredili tako, da smo s tehniko »fat washing-a« združili svežo, tekočo račjo mast in ameriški viski Jack Daniel’s Single Barrel. Ker alkohol nase veže različne molekule arome in okusa je tako nase navezal okus suho zorjene race. Takšen viski pa se je v kombinaciji z aperitivno grenčico in rdečim vermouth-om povezal v čudovit »Račji Boulevardier«, ki je neke vrste »viski Negroni« in se krasno poda z Sorbarino račko.</p>
<p><strong>Sladica: Dva Jacka in njun sosed</strong></p>
<p><strong>Ivo:</strong> Brezglutenki biskvit s slivami, dateljni pravim kakavom in Jack Daniel’s-om, kristalizirano čokolado s Jack Daniel’s Single Barrel viskijem in kepico sladoleda s kostanjevim medom in Woodford Reserve bourbonom.</p>

<p>Ime smo sladici nadeli malo za šalo ampak dejansko je v njej tudi veliko resnice, saj vsebuje kar tri različne ameriške viskije, dva iz družine Jack Daniel’s in njunega soseda – Woodford Reseve, ki ga proizvajajo v Kentucky-ju in je Tennessee-ju, ki je zibeljka Jack-a. Ivo se je poigral z briljantnim biskvitom s sadno noto in Jack Daniel’s old n°7 viskijem, ki ga položil na dehidrirano čokolado, kateri je dodal Jack Daniel’s Single Barrel. Skratka, fuzija čokolade, suhega sadja in prepoznavne note Jack-a. Poleg pa je postrežen njun »sosed«, Woodford Reserve, ki smo ga dodali v domači sladoled in ga oplemenitili s kostanjevim medom. Receptura za sladoled pa izhaja iz naše recepture za »milk punch«, kjer sta smetana in melko že v osnovi prisotna. Tako se nam je zdelo popolnoma nesmiselno, da dodajamo poleg že tako kompleksne sladice kompleksnost koktejla in smo jo raje pospremili s preprostim, čistim, na sobni temperaturi postreženim Woodford Reserv bourbonom, ki okus ameriškega viskija samo še toliko bolj poudari.</p>
